Infuse and Amuse: Margaritas & Popsicles a Perfect Match!

If you're like me and you prefer classic cocktails over the overly complex concoctions that make you flash back to school and chemistry experiments, then you're in for a treat. I'm all about taking those beloved classics and giving them a fun twist with some infusion action. Sometimes, that involves fresh fruit, a Hail M Cocktail Infusion, or, as of late, popsicles!

Now, I have to let you in on a little secret. There's this fantastic local spot here in sunny LA called Mateo's Ice Cream. They craft these incredible fresh fruit bars that are nothing short of heavenly. So, if you find yourself in the City of Angels, this place is a must-visit. But, if you're not in LA, don't fret! Look for a local Mom and Pop vendor, or simply grab your favorite popsicles from your nearest store.

Here's the kicker: I love doing this with a bunch of friends. There's just something about the "Wow!" factor in the presentation and the all-around fun vibes. I gather up an assortment of popsicles and let everyone embark on their own flavor adventure!

Now, let's talk Margaritas. Almost everyone loves them; they're basically the undisputed champion of the cocktail world. So, how about we take a classic Margarita recipe and add a popsicle, or as it's called when we're feeling fancy, a Paleta de Hielo (that's Spanish for popsicle) to the mix?  We'll stick to Paleta for short

Margarita Recipe - Single
1 oz of Lime Juice
0.5 oz of Simple Syrup
0.25 oz of Triple Sec
1.5 oz of Blanco/Silver Tequila
0.5 oz of Water

Now, before you raise an eyebrow at the water, hear me out. Since we're skipping the ice and the shaking, a touch of water helps replicate that delightful and necessary dilution effect.

But wait, there's more! If you're having a party (or just really, really love Margaritas), here's a batch recipe for 8 Margaritas:

Margarita Recipe – Batch for 8

8 oz of Lime Juice
4 oz of Simple Syrup
2 oz of Triple Sec
12 oz of Blanco/Silver Tequila
4 oz of Water

Now, onto the infusion. It's as simple as this: pour about 4 oz of your Margarita (or fill half your glass), choose your favorite popsicle or paleta flavor, and drop it right into your drink. Watch as the popsicle melts and transforms your Margarita into something spectacular infusing bright flavors into your cocktail as you sip. And hey, don't be shy about taking a bite or two along the way – it's all part of the fun!

Looking for mocktail version?  It's super easy.  Remove the Tequila and Triple Sec and add a bit of tonic.  The tonic will introduce some of the bite that tequila adds to the drink and will round out the citrus flavors.

Margarita Recipe - Mocktail
1 oz of Lime Juice
0.5 oz of Simple Syrup
1 oz of Tonic
0.5 oz of Water
